Mini plum crumble cake
These little plum crumble cakes combine juicy, aromatic plums with a light cake batter and a crispy butter crumble topping. Baked in WECK jars, they’re not only conveniently portioned but also a pretty addition to the coffee table. A simple, fruity dessert that tastes especially wonderful in late summer and fall.

Step 1
Preheat the oven to 180°C. Take out the grid. Grease the jars.
Step 2
For the streusel, knead the butter, flour, salt, vanilla sugar, sugar and spices and chill.
Step 3
For the batter, beat butter and sugar until creamy. Stir in eggs one at a time. Mix the flour, salt and baking powder and stir into the egg mixture. Pour the batter into the jars.
Step 4
Wash the plums, halve them, remove the stones and mix with the sugar. Fold in the flour and add the plums to the batter. Sprinkle the crumble over the top and place the cakes on the cold rack, put in the oven and bake for 30-35 minutes. Remove and dust with powdered sugar if desired.
