Girl's blush (Mädchenröte)
Everyone in North Frisia will be familiar with this classic dessert – elsewhere it is also known as “Berliner Luft”. Whatever its name, this pink foam pudding will make anyone blush with happiness.

Preparation
Step 1
Soak the gelatin in water for 10 minutes.
Step 2
Measure out 50 ml of the juice and set it aside.
Step 3
Place the egg whites and sugar in a large bowl and beat with the salt until very stiff and the mixture is glossy. Gradually pour in the juice in a thin stream and stir it in.
Step 4
Squeeze out the gelatin and add it to a saucepan along with the reserved juice. Heat gently, stirring until the gelatin has dissolved. Fold in two tablespoons of the beaten egg whites to bring the mixture to room temperature. Then fold in the remaining beaten egg whites.
Step 5
Pour into the glasses and chill.
Step 6
Garnish with whipped cream and sugar sprinkles before serving.
