Step 1

Wash, core and dice apples. Caramelize the sugar in a pot, deglaze with apple juice and add the apple pieces.

Add lemon juice, spices and bitter almond flavor.

Let simmer for 15 minutes.

In the meantime, roast the chopped almonds without adding any fat. Add to the apple mixture along with the preserving sugar and bring to the boil for 2-3 minutes.

Remove cinnamon sticks and star anise.

Fill the jam into the jars while it is still hot and seal them airtight.
