Blackcurrant jam
Fresh currants are processed into a fruity, tart jam – ideal for bread, rolls or as a topping for desserts.

Step 1
Wash the currants and drain well. Strip the berries from the clusters using a fork, place them in a pot and let them collapse over a low heat, stirring often.
Step 2
Then strain through a sieve back into the pot. Mix with the sugar and let it absorb.
Step 3
Cook while stirring until set, then carry out a set test.
Step 4
Pour the jam into the prepared, hot preserving jars and close with preserving ring, glass lid and preserving clips. Heat in a 90°C water bath for 15 minutes to preserve.
