Step 1

Peel and finely chop the garlic cloves and mix with the butter in a small bowl.

Wash the lemon with hot water and dry. Grate the lemon zest. Add about 1 teaspoon of zest to the butter and mix in with a little lemon juice.

Season with salt and pepper. Stir in a little more lemon juice if desired.

Step 4

Pour the softened butter into a piping bag and pipe it into the prepared jars. Seal with a glass lid, preserving ring and two preserving clips and store in the fridge.
