Spicy grill butter
Chilli and cayenne pepper make this butter wonderfully spicy – perfect with steak, sweetcorn or grilled vegetables!

Step 1
Rinse the chili pepper and pat dry. Then remove the stem, cut in half lengthwise, remove seeds and partitions and cut into small pieces.
Step 2
Put the butter in a bowl and stir in the chilli pieces.
Step 3
Add the spices, work in and season to taste.
Step 4
Transfer the softened butter to the clean jars, making sure there are no air pockets.
Step 5
Close the jars with preserving rings, glass lids and two preserving clips. Store in the fridge until ready to use.
Step 6
To serve the butter, briefly dip the jar in hot water, then open it and turn it out onto a tray or plate.
