Step 1

In a pot, cover the beef, greens and bay leaf with cold water and bring to the boil. Season with salt and pepper and cook slowly until soft, about 2 hours. Let the meat cool in the water.

Step 2

Remove the meat from the pot and remove the fat if necessary. Cut into fine strips. Peel the onion, halve it and cut it into fine strips. Cut the cucumbers into slices.

Step 3

Mix all the ingredients for the marinade. Mix with the meat in a bowl and let sit for 2-3 hours.
