Red cabbage salad with smoked trout
Finely chopped red cabbage meets onion, vinegar and mustard dressing, and aromatic ingredients – a fresh salad with bite and character.

Step 1
Remove the outer, unsightly leaves of the cabbage. Cut out the stalk and cut the red cabbage half into quarters. Cut or slice these into thin strips.
Step 2
Mix with the salt in a bowl and let sit for about 30 minutes.
Step 3
Then knead well with your hands so that excess liquid is squeezed out of the cabbage.
Step 4
Peel the onion, chop finely and mix in.
Step 5
Mix mustard, oil and lemon juice into a vinaigrette and mix into the salad.
Step 6
Season with salt and pepper.
Step 7
Serve with a piece of smoked trout and walnuts.
