Boiled runner beans
Preserved green beans are a convenient way to preserve fresh beans and retain their flavor. After a brief blanching, the beans are placed in jars and covered with a simple salt solution. Sealed tightly, they are processed for 120 minutes at 100 °C. This way, you’ll always have crisp beans on hand as a side dish or for hearty meals.

Step 1
Wash and clean the beans. Blanch in boiling salted water for 3 minutes, drain and drain.
Step 2
For the brine, bring the water to the boil and dissolve the salt in it. Distribute the beans into the prepared jars, fill with brine and close with a preserving ring, lid and clips. Cook at 100°C for 120 minutes.
