Step 1

Soak the gelatine in water for 10 minutes. Remove 50 ml of the juice and set aside.

Step 2

Place the egg whites and sugar in a large bowl and beat with the salt until the mixture is glossy. Gradually pour in the juice in a thin stream and stir in. Squeeze out the gelatine and put it in a pot with the reserved juice. Heat gently and stir until the gelatine has dissolved. Fold in two tablespoons of the red egg whites to equalise the temperature. Then fold into the remaining egg whites. Pour into the jars and chill.

Garnish with cream and sugar sprinkles before serving.
