Shallot salt
With just a few ingredients – fine shallots and coarse sea salt – you can create an aromatic speciality salt in just a few steps that will enrich any kitchen. Ideal for stocking up and as a gift in a jar.

Step 1
Peel the shallots and dice finely.
Step 2
Line a baking tray with baking paper and spread the shallot cubes on it.
Step 3
Leave to dry in a preheated oven at 80° C (lowest gas level) with the oven door slightly open for about 1 ½ hours, turning over and over again.
Step 4
Remove from oven and allow to cool.
Step 5
Place the dried shallots (about 15 g) with the sea salt in a blender and blend until fine.
Step 6
Pour into a jar, close and store in a dry place.
