Step 1

Cut the bacon into fine strips and fry in a pan until crispy without adding any fat.

Pour off the resulting liquid.

Peel the onions, cut them into small pieces and sauté them with the bacon until translucent.

Peel the garlic, press it in and sauté it.

Finely dice the apricots, add sugar, vinegar and water and simmer over medium heat while stirring.

Rinse the thyme, shake dry and chop. Add to the bacon mixture and simmer for about 10 minutes.

Season with salt and pepper if desired.

Pour the hot mixture into prepared glasses. The jam will keep cool in the fridge for about 3 weeks.

To eat, warm it up again as desired.
