Pear mustard
Fruity mustards are ideal as an accompaniment to cheese platters, in dressings or with roasted meat. The sweet and sour notes of pear and the slight spiciness of mustard harmonise perfectly with each other.

Step 1
Peel, core and finely dice the pears.
Step 2
Peel the shallot and dice finely.
Step 3
Put both in a pot and add the water. Bring to the boil and simmer gently for 20 minutes.
Step 4
Mash lightly with a fork.
Step 5
Stir in the preserving sugar and simmer for 5 minutes.
Step 6
Stir in the vinegar.
Step 7
Roughly crush the mustard seeds in a mortar.
Step 8
Reduce the temperature and stir in ground mustard seeds and mustard powder.
Step 9
Season with salt, pepper and more vinegar if necessary.
Step 10
Pour into jars and seal airtight.
