Elderflower vinegar
To enjoy the taste of elderflower even after the season is over, it can be preserved in a variety of ways – usually in the form of jelly or syrup. But elderflower doesn't just taste good in sweet recipes! How about elderflower vinegar, for example? Refined with the fruity taste of strawberries and a floral rose note, it goes perfectly with fresh summer salads.

Step 1
Sort the strawberries, rinse and drain. Remove the calyx and quarter the fruit.
Step 2
Shake out the elderflower umbels.
Step 3
Place in a jar with the rose petals and add vinegar.
Step 4
Close with a glass lid, preserving ring and preserving clips.
Step 5
’Leave to infuse for a week in a cool, dark place.
Step 6
Strain the vinegar through a sieve and pour into a prepared bottle, close.
