Step 1

Wash the cherries, pit them and puree until smooth.

Bring the vanilla pulp, sugar and water to the boil in a saucepan and simmer gently for 1 minute.

Rinse the thyme and shake dry. Remove the syrup from the heat and add the thyme. Mix the syrup, cherry and lemon juice and cool well.

Step 4

Before serving, fill a large punch bowl with ice cubes as desired, pour in the mixture and top up with (sparkling) mineral and still water. Stir once to mix everything together.
