Step 1

Grate, wash, quarter, core and slice the quinces.

Step 2

Put the fruit in a pot, cover with water and cook until soft. This can take up to 1 hour, depending on the variety.

Step 3

Pour the resulting juice through a fine sieve and collect it. Pour into a bottle and seal immediately. Store in the fridge or preserve in a water bath
