Step 1

Shake out the elderflowers, then rinse carefully under cold water. Drain well. Cut the flowers from the thick stems and place them in a large, sealable container, e.g. a 1590 ml WECK cylinder jar. Add the lemon zest and lemon juice, rock sugar and vodka. Seal the jar with a preserving ring, glass lid and preserving clips. Leave in a bright, but not sunny place for about 4-6 weeks.

Step 2

After the maturation period, strain the liqueur through a sieve lined with a cloth to remove the flowers and lemon zest. Pour the elderflower liqueur into small bottles, e.g. WECK deli jars with a capacity of 100 or 200 ml.
