Step 1

Drain the artichokes in a sieve, reserving some of the brine (approx. two tablespoons).

Lightly toast the pine nuts in a pan until they begin to smell fragrant. Remove from heat and let cool.

Peel and chop the garlic.

Puree all ingredients finely in a blender and season with salt and pepper.

Mix in a little more brine and water if necessary.
