Step 1
Clean the quinces off with a cloth, cut them in half and remove the core.
Step 2
Cut the fruit into small pieces.
Step 3
Bring to the boil with water, white wine and lemon juice while stirring. Cook until soft, 30-40 minutes.
Step 4
Then pass the mixture through a strainer cloth or fine sieve and measure it out. One kilogram of sugar is weighed out for every kilogram of fruit pulp. Mix the quince puree and sugar and bring to the boil while stirring. Let it simmer for a few minutes, then carry out a setting test.
Step 5
While still hot, pour into the prepared jars and seal airtight.
Step 6
Cook at 90°C for 10 minutes.
