Dark chocolate cherry jam
This dark chocolate cherry jam combines the sweetness of ripe cherries with a slightly bitter chocolate flavour. It is perfect as a spread, with pastries or as a special addition to desserts, and provides an intense fruity treat in a jar.

Step 1
Sort the cherries, rinse and drain well. De-stem and de-stone. Quarter or eighth half of the cherries. Leave the other half as is.
Step 2
Put the cherries, preserving sugar and lemon juice in a large pot and mix. Let it steep for about 1 hour.
Step 3
In the meantime, chop the chocolate into small pieces. Cook the jam according to the package instructions until bubbly, about 4 minutes.
Step 4
Carry out a setting test.
Step 5
Finally stir in the chocolate.
Step 6
Pour the jam into the prepared hot jars. Close with preserving ring, glass lid and preserving clips. Allow to cool.
