Step 1

Sort the cherries, rinse and drain well. De-stem and de-stone. Quarter or eighth half of the cherries. Leave the other half as is.

Put the cherries, preserving sugar and lemon juice in a large pot and mix. Let it steep for about 1 hour.

In the meantime, chop the chocolate into small pieces. Cook the jam according to the package instructions until bubbly, about 4 minutes.

Carry out a setting test.

Finally stir in the chocolate.

Pour the jam into the prepared hot jars. Close with preserving ring, glass lid and preserving clips. Allow to cool.
