Sun-ripened apricots meet sugar and a dash of lemon to create a fruity-sweet jam that perfectly complements bread or pastries.

Step 1
Wash, clean, halve, stone and puree the apricots. Mix with the remaining ingredients. Cover the puree and leave to infuse for two hours. Heat on the hob, stirring constantly, until the mixture thickens. Test for setting.
Step 2
Remove from the heat and immediately pour the jam into the prepared jars. Seal each with a preserving ring, lid and preserving clips and heat for 10 minutes at 90° C to preserve.
Step 3
When testing for setting, place a large blob of cooked fruit mixture on a cold saucer. The test will be positive if no watery edge forms around the mixture and the jam does not run down when the plate is held at an angle
