Bread and egg muffins wrapped in bacon
A whole breakfast sandwich in a jar! With bread, eggs and bacon, you can start the day off right!

Preparation
Step 1
Remove the oven rack. Preheat the empty oven to 180° C (gas mark 2 – 2 ½).
Step 2
Grease the jars.
Step 3
Cut out the bread slices to the size of the bottom of the jar.
Step 4
Peel the onion and dice finely.
Step 5
Wash and clean the peppers and also dice them finely.
Step 6
Beat the eggs with a whisk without whipping the mixture until foamy.
Step 7
Fold the pepper and onion cubes into the egg mixture.
Step 8
Season with salt and pepper.
Step 9
Place four slices of bacon crosswise in each jar, allowing the ends to hang over the rim of the jar. Place a slice of bread on top.
Step 10
Divide the egg mixture into the prepared jars, place the jars on the cold rack and bake for 20 - 25 minutes.
Step 11
In the meantime, rinse the chives, shake dry and chop finely.
Step 12
Take the jars out of the oven, place them on a wooden board and let them cool briefly. Remove the muffins from the jars and serve garnished with chives.
Step 13
Plus slices of protein bread and a small green salad, e.g. with edible flowers.

- Salt, freshly ground pepper
- 16.0 thin Bacon rashers
- Some chives
- Grease for the jars
