Step 1

Mix all ingredients in a sealable bowl, cover and let sit in the fridge overnight. If you like, you can stir cinnamon into the base mixture for a little more flavour.

Step 2

Place the overnight oats in a jar or bowl. Sort the berries, wash and pat dry. Set aside half a handful and puree the rest. Layer on top of the oats. Place the curd on top, distribute the remaining blueberries on top and garnish with the mint.
