Step 1
Wash, core and dice apples. Caramelise the sugar in a pot, deglaze with apple juice and add the apple pieces.
Step 2
Add lemon juice, spices and bitter almond flavour.
Step 3
Let simmer for 15 minutes.
Step 4
In the meantime, toast the chopped almonds without adding any oil. Add to the apple mixture along with the preserving sugar and bring to the boil for 2-3 minutes.
Step 5
Remove cinnamon sticks and star anise.
Step 6
Fill the jam into the jars while it is still hot and seal them airtight.
